My Hero

My wife Denise and my 3 boys - they keep me young at heart and support everything I do, even in my madness.

My villain

Customers who don't get what we are trying to do in Pichet and how hard we work. You know who you are... green beans my arse, there are bigger problems in life.

Low point

Being fired two weeks before Christmas in 2007 as we had just had a new baby and I was worried for my family. I am a true believer everything happens for a reason.

Invention

My iPhone has moved me on from the brick

If i could change one thing

The recession as I don't think we knew it was on the way & are unable to deal with it. Although the recession has helped us get our fantastic place on Trinity Street, City Centre – let's hope everybody supports us in 2010.

Work of art/book/song

"Sometimes you cant make it on your own" by U2.

My happiest time

When I opened my own restaurant. Having spent 22 years working for others it's a real sense of achievement.

My greatest hope

That my business survives and my three children are healthy. PS, I wouldn't mind retiring to a beach in France to paint and drink lots of wine.
